Kick start a morning with egg

I am not a morning eater, actually, but sometimes I crave for a yummy breakfast, so these are two of the yummy starters I had.

Omelette

This is a simple omelette with two eggs whisk with small cut fresh tomatoes, chopped green onion , cheddar cheese and sliced onion .Put all together, toss in the salt and pepper, fry it till nicely brown.

A slice of brown bread, toast. Scrambled egg from 1 egg, fried Tuna ( I fry two tablespoons  chunk tuna ) and buttery julienne carrot. For the carrot, I stir fry it with butter just for two minutes.

Two Ways of Roasting Garlic

I fell in love with roasted garlic for the first time at a Korean restaurant. I was curious to try it when the waitress who attended the barbecue cooking at our table roasted a small bowl of garlic diving in a pond of sesame oil. I was not so sure that I would like the taste but then the first bite had caught me in full swing of its amazing tender and sweet taste. It didn’t take a day to decide that this would always be my favorite snack.

I put here two pictures of two ways I love roasting it. First picture is I roast the whole . Peel the outer layers ( I didn’t peel it completely ) then cut about a 1/2 inch from the top of the clove. Pour some sesame seed oil or olive oil into each of the clove, wrap it with foil, put in a ramekin or if you make more, put them into the muffin pan. Bake it at 190 C for about 20-30 minutes,  you may check it if it has softened. I love to have it a little bit overcooked which you can get a very soft one, tastes like mashed potato.

This second picture is the one like I had at the Korean restaurant. Peel some cloves, put into a ramekin and pour one tablespoon of sesame seed oil or as many as you like, and bake it for about 20 minutes at 190C . I like it with a tiny pinch of salt, mix together with the sesame seed oil.

Then just grab a fork and enjoy one of the world’s healthiest snack ever known.

Hidden Crunchy Bites in Brownies

What makes the best brownies ? The chocolate . And I am glad I found this kind of dark chocolate for baking my brownies. It’s a local product and their chocolate is good.

I have read many about this kind of brownies but had not tried it till few days ago. I adapted the recipe for fudge brownies from http://www.taste.com.au and played a little bit with it to match my taste like I reduce the sugar amount and the time of baking ( the time of baking depends on the oven you have ).

Here is the recipe :

200 gram dark cooking chocolate, melted

200 gram unsalted butter, melted with the chocolate

3 eggs

2 egg yolks

5 tablespoons of sugar

115 gram all-purpose flour

35 gram cacao powder

4 packs of 42 gram Kit Kat

2 packs of size-bite Snicker ( I used Knockers from Delfi )

Put the Kit Kat and Snicker in the freezer prior using it for a day or a couple of hours

Note : I used Kit Kat and Knockers as  I run out of Kit Kat . To cover the whole surface , I slide the Knockers in between .

Methods :

Preheat oven to 190C. Brush  a 16x 26 cm pan with melted butter ( I used 16×16 cm ) . Line with non stick baking paper. Leave some of the baking paper hanging on each side of the pan to make it easier take out the brownies .

Melt the chocolate and butter in a heatproof bowl over a saucepan half-filled with simmering water.

Whisk the sugar , the eggs and egg yolks in a bowl till well combined. Allow the chocolate mixture to cool slightly before adding it to the egg batter.

In another bowl, combine the cacao and flour then add into the chocolate mixture. Stir well. Pour into the prepare pan for about one cm.

Bake for 3 to 5 minutes just to let the batter harden a bit. Take out and arrange the Kit Kat and Snickers on top then pour the rest of the batter. Bake it for 25 minutes or you may check if it’s done by inserting a toothpick to come out clean.

Serve warm or you can refrigerate it for the next day . More delicious.

I totally agree with that sweet-muscled-guy that Spinach is good for you. These are my two recipes I cooked and ate for my breakfast and lunch recently. What should I name them ? Just call it mixed yummy toast and corny spinach soup. The soup we call it here, Sayur Bayam  Bening ( sayur = veggie / bayam = spinach / bening = clear ), just that simple. It’s refreshing though you eat it without any side dishes.

The recipe for this mixed-yummy-toast is two slices of wheat bread, a slice of smoked beef ( you may have the bacon ), some spinach, one slice of cheddar cheese or mozzarella  and  one poached egg.

I lightly butter the wheat bread and grilled them on a frying pan for a few minutes, just to have a brown crispy toast. As for the smoked beef, I grilled it with a teaspoon of honey and boiled the spinach for one minute. The poached egg ( I know it’s not good looking and I was not happy with the result. I would do better one next time ) .That’s it all. Arrange all things and have a good breakfast, guys.

Ingredients :

4 clove red onion, thinly sliced

2 clove garlic, thinly sliced

1 piece of fingerroot/Chinese keys ( * optional ) this gives more fragrant to the soup

1 cup of fresh corn or canned corn ( I use the fresh corn )

A bunch of spinach ( about one bowl 16cm )

1 cup of boiling water

Pinch of salt and pepper

Methods :

* Put the red onion, fingerroot and garlic together with the fresh corn in the boiling water and cook it for two minutes

* When the corn is softened, add the spinach. Just cook for a minute. Sprinkle the salt and pepper to taste.

* Serve warm.

Go Healthy with Tofu

When you happen to be in Indonesia, you may find many kind of dishes using Tofu, from  the street food vendors to a fancy Indonesian or Chinese restaurant. We call it Tahu. Tofu can be easily cooked as well. You may just marinate it with salt and minced garlic , grill or deep frying it then eat it with tomato or chili sauce, yummy.

I tried this Japanese recipe , Teriyaki Tofu Patties and I must say it’s very good. Even eating it without any other dishes. But well, being an Indonesian, rice is our  main dish so I had the Tofu as the side dish. Still I ate only three tablespoons of steamed rice and all those five tofu patties (Oopss).

Here is the recipe.

Ingredients :

  • 150 gram fresh soft/medium Tofu ( I bought it at the traditional market where we can buy the homemade one)
  • 1 medium onion, chopped
  • 4 tablespoon Panko ( breadcrumbs )
  • 1 egg , beaten
  • 1/3 cup green onion , thinly sliced
  • ¼ teaspoon ground ginger or powder

Sauce :

  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp mirin
  • 1 tbsp sake
  • salt and pepper for taste

Methods

  1. Heat oil in a frying pan and sauté onion for 3 min over medium heat
  2. Transfer onion to a dish and cool
  3. Mash tofu in a bowl and mix it with onion, panko, eggs, green onion, ginger until well combined , add salt and pepper to taste
  4. Take one tablespoon of mixture and form it into oval patties
  5. Heat oil in a frying pan, and cook tofu patties for 2 minutes , covered over medium heat
  6. Flip and cook another 2 minutes, still covered
  7. Mix soy sauce, sugar, mirin, and sake in a small bowl
  8. Turn heat to low, add the sauce and sauté for 30 seconds, or until the sauce is absorbed by the patties
  9. Serve warm over steamed rice or have it as a healthy snack

This is the way I had it  ( with steamed rice and sautéed  garlic zucchini )
